Everyday Occasions with #CoolWhipFrosting {Review}

Usually I make cupcakes or cakes to celebrate a birthday or holiday.

I was tasked with making cupcakes/cake to celebrate an everyday occasion. There are those moments in life where one does need to just celebrate and enjoy! So, I decided to make cupcakes to tell my co-workers how much their hard work is appreciated. I know that seems a little odd, but I work at a place where sometimes we get really burnt out and don’t feel appreciated. Or we’re just stressed and need a cupcake.

Whatever works!

For this project I had to try out the new Cool Whip Frosting. I’ll admit that I am a buttercream girl, so I was expecting the Cool Whip Frosting to be an alternative to my usual icing, but not anything spectacular.

I was so wrong.

Y’all…this stuff is SO GOOD.

There’s 2 flavors. I hope they’ll add more. Maybe seasonal flavors? Then I grabbed some funfetti cake. Who doesn’t like funfetti cake?!

I made the cupcakes as directed, but I also added about 1/2 cup of mini chocolate chips. YUM.

Let the cupcakes cooldown COMPLETELY. You don’t want your frosting to melt.

Then, grab a large spoon and frost! I used a big tablespoon for 2 reasons:

1.) Good portion control.

2.) Easy to frost using the spoon to make a little mound of icing.

Finally, I decided it needed a little pizazz. Edible pearls and glitter to the rescue!

Finally, a post it folded up as a tent with a hand written note is my finishing touch.

I bestowed my everyday occasion, morale boosting cupcake to my co-worker/pal, and she gave the smile of approval!

Overall, I like that the frosting + store bought cake mix gives me a quick, easy way to make cakes/cupcakes during the work week. I like to make stuff from scratch, but because of all the effort, I save it for special occasions. Now with this fabulous, easy to use frosting, I don’t have that worry. It’s not exactly low calorie (60 calories/2 tbsp), BUT it is so delicious and creamy that one tablespoon is enough for a cupcake. It is sweet, light, yet deliciously satisfying.

In love. I hope they add more flavors to the line-up such as cream cheese, mint, or even cinnamon sugar for the holidays. Just an idea Cool Whip!

Again, it’s in the freezer section at Walmart for about $2.28. Easy to use, affordable.
